Located in southwest Colombia, Huila is nestled in-between the central and eastern ranges of the Andes, within the area called the Magdalena Valley. The variation in elevation results in Huila being one of the most unique and complex region for coffee in Colombia. It representes 20% of the country’s production while 80% of the producers operates on less than 3 hectares. Finca El Faldon is managed by Luis Felipe, his brother Arnulfo and Arnulfo’s son Diego. The Legiuzamo brothers are members of the association Los Naranjos gathering 50 to 100 families to better farming techniques and the access to international market. Tabi is an arabica varietal developed in 2002 by Colombia’s National Coffee Research Center (Cenicafé) to fight leaf rust. It’s a complex hybrid cross of Typica, Bourbon and the Timor Hybrid giving fruity and floral notes with a slight acidity and a silky body. For the process of this lot, coffee is picked ripe and depulped the same day, then given an open-air fermentation in tanks between 12-36 hours. The coffee is washed clean before dried keeping the sweetness and crisp acidity this coffee as to offer.
