Nestled in the misty hills of Ojos de Agua, in the La Paz department of Honduras, Finca El Jardin, sitting at 1700 masl is one of three farms owned by Mario Majia’s family Finca el Coyote, Finca la Valentina and Finca el Jardin. A second-generation grower, he took over the 32 hectares at just 24 years old. Armed with an agronomy degree and a deep curiosity about specialty coffee, Mario began reimagining what Honduran coffee could be. He launched the local Specialty Coffee Program in 2019, teaching neighbors producers about quality-focused growing and processing, and in 2023 built his own wet mill to extend that knowledge further into the community. The varieties on this lot are among the most expressive in the region. The natural process here is relatively uncommon in Honduras. The cherries are sorted ripe and laid on raised beds to dry for a month or more allowing the fruit to slowly transfer its sweetness and depth into the bean.
