Information:

Hambela is the district that put Guji on the global specialty
map. At 2,000–2,200 masl, rolling hills covered in indige-
nous trees shelter soils unlike anywhere else: iron-rich red
laterite overlaying volcanic substrata, a mineral foundation
that builds depth and layers into every cup.
This coffee is produced at the Hambela Wamena Washing
Station, founded in 2018 by the founder of Tega & Tula
farms. Situated at the highest peak of the Guji Hambela
zone, the station serves as a central collection point for
around 3,900 smallholder producers from the surrounding
area. Beyond the coffee itself, the washing station invests
actively in the community by funding roads, schools,
technical support for producers, and women’s healthcare
programs.
Once the coffee is picked up, whole cherries are dried on
raised African beds for 18 to 25 days. This extended natu-
ral process draws out the intense blueberry and strawber-
ry jam character that has made Hambela lots some of the
highest-rated in Ethiopia

 
Recipe

We suggest to let the coffee rest for at least 10 to 14 days before brewing it.

Espresso: We recommend using a ratio of 1:2. The extraction time should be between 26-34 seconds depending on the coffee, temperature, pressure and water quality.

Filter: We recommend to use a ratio of 60 grams of coffee for 1 litre of water. Of course you can adjust the ratio based on your brewing method, water quality and on the preference of your palate.
