Potosi was acquired in 1930 by Israel Correa and Carmen Rosa Vega. In the late 90s, their grand children, Rigoberto and Luis gave the farm a new direction, acquired more farms and turned Potosi farm to organic production. Granja La Esperanza helped revolutionize Colombia’s coffee industry by shifting from traditional high-volume commercial coffee to high-end specialty varieties. They took major risks by planting exotic varietals that were rare in Colombia at the time and their coffees have consistently won top places in international competitions.
With this coffee, every cherry is hand-picked at its peak ripeness, en-suring only the best make it to your cup. Through a meticulous floating process, they gently separate the grain less dense from the rest, guarantee superior quality. Next, they measure their natural sweetness with precision, setting the stage for fermentation magic. For 72 hours, these cherries are lovingly fermented in open tanks, unlocking the vibrant, complex notes that will define your coffee experience.
The cherries are dried to perfection using advanced mechanical dryers, ensuring consistent flavor development over 8 to 12 days at a controlled 38°C. Once dried, the beans rest in climate-controlled storage, cocooned at an ideal 18–19°C to preserve their unique character until it’s time to shine.
