Granja La Esperanza helped revolutionize Colombia’s coffee industry by shifting from traditional high-volume commercial coffee to high-end specialty varieties. They took major risks by planting exotic varietals that were rare in Colombia and their coffees have consistently won top places in international competitions.
Cafe Granja la Esperanza is composed of 5 farms in 12 communities. La Margaritas is their self-named “Garden of varieties” with coffees such as gesha, mokka, laurin and pacamara.
Every cherry is handpicked at its peak ripeness and carefully submerged in water for a selection process that removes lower-density beans, ensuring only the highest quality make it through. They measure natural sugar levels to perfect the fermentation process, where the beans rest for a 72-hour aerobic fermentation. This meticulous method brings out complex, bright flavors before the beans are gently washed, ready for drying.
The beans are dried in carefully monitored mechanical driers over 3 to 5 days at a stable 38°C, locking in their distinct profile. Once dry, they are stored in climate-controlled rooms, kept at a steady 18-19°C, preserving their flavor notes and aroma until they reach your cup.
