Granja La Esperanza helped revolutionize Colombia’s coffee industry by shifting from traditional high-volume commercial coffee to high-end specialty varieties. They took major risks by planting exotic varietals that were rare in Colombia at the time such as this Sudan Rume and their coffees have consistently won top places in international competitions.
It is composed of 5 farms in 12 communities. La Margaritas is their self-named “Garden of varieties” with coffees such as gesha, mokka, laurin and pacamara. This lot starts with a deep focus on quality - cherries are sorted by ripeness and density to ensure only the best move forward. The journey continues with a first stage open-tank fermentation lasting 18 hours, unlocking delicate florals and citrus layers. Once pulped the coffee undergoes a second, oxygen-rich fermentation for 24 hours. A thorough wash follows, preserving clarity and elevating the cups complexity. The beans are gently dried in mechanical silos at controlled temperature around 38°C, allowing flavors to concentrate slowly over 3 to 5 days.
