Information:

Tucked between the Central and Eastern ranges of the Andes, Huila is one of Colombia’s most celebrated coffee regions with a landscape shaped by elevation and mist where 80% of farmers work plots under three hectares.

This lot brings together three of Colombia’s most trusted varieties: Castillo, Caturra, and the Colombia variety.

The coffee is fully washed: depulped the day of picking, fermented in open-air tanks, then dried slowly under parabolic shelters.

To remove the caffeine, the green coffee undergoes a Natural EA process using ethyl acetate, a compound found naturally in bananas and fermented sugar cane. The seeds are steamed to open their pores, then bathed in a water-and-EA solution over eight hours until no caffeine remains. A final steam removes any traces, leaving the coffee clean and ready for roasting.
Recipe

We suggest to let the coffee rest for at least 10 to 14 days before brewing it.

Espresso: We recommend using a ratio of 1:2. The extraction time should be between 26-34 seconds depending on the coffee, temperature, pressure and water quality.

Filter: We recommend to use a ratio of 60 grams of coffee for 1 litre of water. Of course you can adjust the ratio based on your brewing method, water quality and on the preference of your palate.
