Pacayalito Farm sits in the hills of Chimaltenango, Guatemala, a region known for its rich volcanic soils and ideal microclimate for coffee cultivation. Managed with care and dedication, the farm produces beans with bright sweetness and smooth balance, reflecting both the land’s natural richness and the producers’ commitment to quality and sustainability. The Swiss Water Process is a chemical-free method of decaffeination that preserves the coffee’s original flavor and-aroma. It begins with soaking green coffee beans in pure water to create a “Green Coffee Extract.” Caffeine molecules naturally migrate from the beans into this extract while flavor compounds remain intact. The extract is then filtered through activated charcoal, which traps the caffeine but leaves the flavor profile untouched. The now caffeine-free extract is used to gently decaffeinate new batches of beans, maintaining consistency and quality. The process is repeated until the coffee is 99.9% caffeine-free. Because no solvents are used, the resulting cup is clean, full- bodied, and true to origin, showcasing all the rich sweetness and complexity of Pacayalito’s Huehuetenango terroir.
